Aleppo
Named for the Syrian city. A burgundy-red C. annuum traditionally sun-dried, seeded, and crushed into coarse flakes with a small amount of oil. The resulting spice has a fruity, raisin-like sweetness with moderate heat. The Syrian civil war severely disrupted Aleppo pepper production, and much of what's sold now as 'Aleppo pepper' is actually grown in Turkey under the name Pul Biber.
